I was up late last night watching tv when I started craving something sweet. I promptly went downstairs to see what I could find to munch on. I came across some ice cream inside my garage refrigerator. With my spoon in hand, I grabbed the ice cream, and was ready to dig into some yummy neapolitan ice cream.
However, to me devastation, I found out the ice cream was too soft. I guess the refrigerator’s freezer compartment was not cold enough to keep the ice cream solid. I personally, can not stand soft ice cream, and I couldn’t bring myself to eat it. So, I put the ice cream in our deep freezer in hopes to make the ice cream more solid, and continued my search.
Bummed, and still craving something sweet, I did what I do best, and rummaged through my pantry to see what I could come up with. I knew that whatever it was, had to be quick. No baking, or anything that took too long. I was too lazy to wait around on cookies. So, I decided to make some oatmeal, and add a few other ingredients to satisfy my need for sweets.
This ingredients that I grabbed were:
1/2 Cup Oatmeal
1/2 Cup + 1 TB of Almond Milk (You can use any milk)
1/2 Tea Almond Extract
1/2 TB Brown Sugar
1/8 Tea Cinnamon
1 TB Silvered Almonds
1 Tb Chocolate Chips
Added all the ingredients to a small saucepan.
cook until oatmeal until done. About 2-3 minutes. Stir if needed.
Put in a bowl, and pour 1 Tb almond milk over the oatmeal.
Top with the chocolate chips and almonds.

This Almond, Chocolate Chip Oatmeal was not only delicious, it was easy to make. A better choice than a candy bar. I’m glad I picked something warm to snack on instead of eating something that would have made me cold anyway.
I’m a huge fan of oatmeal, and being that January is National Oatmeal Month, I figured I would share with you some of my other oatmeal recipes below.
