Yesterday, I was so tired. I laid down after I took the kid to school at 8am. I woke up at 12pm! It was a good, long nap that was much needed.
Hubby came home for lunch and said, “Good job babe! You learned how to get some rest. I’m so proud of you.” Hahaha he is silly, but oh so supportive.
After sleeping the morning away, and not being able to get things together I ended up spending the afternoon getting things done. I had some pork chops that I had already seasoned, and put in the freezer. I put the frozen meat inside my crockpot, I set it, and cleaned up around the house.
I wanted something different from the usual rice and green beans, or potatoes and broccoli kind of side dish. I had all kinds of vegetables, and didn’t know what I was going to do with them. I decided to mix all of what I had, and baked it. The dish came out great!
To make this baked dish you will need:
10 small red potatoes
2 1/2 cups of sliced zucchini
1 whole bell pepper (any color, diced, I had a yellow one of hand)
1 sweet potato, diced
3 Tablespoons of minced garlic
2 cups baby carrots
1 onion diced
2 plum tomatoes, diced
Parmesan cheese, grated
3 Tablespoons olive oil
Salt, pepper, garlic powder to taste
Directions:
Pre-heat oven at 350 degrees.
Cut up all of the vegetables. Mix together with salt, pepper, and garlic powder. Coat with the olive oil.
Bake in the oven for 45 minutes. Sprinkle with Parmesan and cook for another 15-20 minutes.
An easy side dish served with my smothered pork chops.
