During the school year, My hubby and the boys like to take their breakfast on the go. They aren’t hungry in the morning so when I would make a pancakes and eggs type of breakfast, a lot of the food was wasted.
Hubby told me that when he gets hungry around 10am at his desk and he can’t get away to grab a snack from the office kitchen, he eats my sandwich. He told me it was a life saver for him. His co-workers have considered him spoiled 😉 The boys like to eat on the way to school or during their morning break. The girls and I like to eat first thing in the morning. We start out hungry and they don’t.
There is nothing special that I feel I do with my breakfast sandwiches, they are simply made with love.
I toast an english muffin
I cook the sausage
I make the eggs. Sometimes scramble, sometimes fried
And then I put the sandwich together
Sometimes adding half of a slice of cheese
And that is it
Last school year I made them fresh every morning. Even though it doesn’t take much time in the morning to make I still wanted to have a way to have the sandwiches be even more convenient for my family. So I decided to freeze them.
Instead of making eggs in the pan, I made them in the oven
I used homemade cooking spray to grease the insides on the muffin pan. I cracked an egg in each.
I added some alt and pepper onto the top of the eggs.
Then I baked them in a preheated oven at 350 for 20-25 minutes.
Don’t know what happened to that one overflow egg. But the eggs come out cooked and fluffy.
While the eggs cooked, I warmed up Jimmy Dean’s precooked sausage patties in a pan, and toast the english muffins. I spread a little butter onto the muffins and let it sit.
When everything was done and cooled completely, I assembled the sandwiches.
Cheese for the boys, no cheese for the hubby. (Sorry for the dark picture)
Once assembled, I placed the sandwiches on a cookie sheet and put them in the freezer for about 30-45 minutes. This will eliminate the soggy effect later in the microwave.
Once the sandwiches froze up a bit I grabbed some saran wrap and ziplock bags. I wrapped each sandwich up tightly with the saran wrap and then place the wrapped sandwich in a sandwich size ziplock bag. I put four wrapped sandwiches into a gallon size freezer bag. Into the freezer they go.
When the boys are ready to eat, they grab a sandwich, take it out of the bag, unwrap the plastic, wrap the sandwich up in a paper towel (this is key) and warm it up for 1 minutes and 30 seconds.
That’s it! Breakfast is easily served and everyone can make one on their own. On Sundays, I make enough to last the whole week. An hour out of my time on Sunday, is a weeks worth of morning time saved!
What does your family eat for breakfast? Do you cook during the week or just on the weekend?

Ok – I totally need to do this in our family. What a great idea!!!
Thanks!
I do something quite similar to this but cut out the bread and layer it in the bottom of the pan before the egg goes in. Also, I wrap a piece of 1/2 cooked bacon around the outside. Minimal stick and they’re cute!!
MMMM Bacon cups!! Those are delicious!!
I never thought to do them all at once. I usually do them individually (it’s a common lunch here).
Great idea!
I wish my boys would want to eat something else but this sandwich is it. 5 days a week. They love it.
Will have to try this – thanks for the tip on preventing them from getting soggy
Welcome! Enjoy!
