Pumpkin Season!

October is here and so are pumpkins!! They are everywhere right now. I love this season. I’m an avid fan of the smell and flavor of pumpkin. As soon as I seen pumpkin patches all over the city I knew it was time for some good comfort food.

Last week I made my yummy Pumpkin Bread. As I was baking, the aroma filled my house. Waking up my senses and my stomach. When the kids came home, each one of them made a comment about the pumpkin smell being back in the home. They know what every year I make my pumpkin bread to bring in the season. Hope your family will enjoy this bread as much as mines do.

Ingredients:

1 cup of oil ( I used coconut oil, melted)
3 eggs, beaten
1 (15oz) can of pumpkin puree or 2 cups of fresh, cooked pumpkin
1 Teaspoon vanilla
2 1/2 cups of white sugar
2 /1/2 cups whole wheat flour (all-purpose flour is fine)
1 Teaspoon baking soda
I Teaspoon ground nutmeg
1 Teaspoon ground allspice
1 Teaspoon ground cinimon
1 Teaspoon ground cloves
1/4 Teaspoon salt
1/2 cup of pecan or walnuts (optional)

Directions:

Preheat oven to 3500 degrees
Grease 2 loaf pans or one bundt pan
Cream oil, beaten eggs, pumpkin, and vanilla together

Sift the flour, sugar, baking soda, and all of the other seasonings
Add the flour mixture to the pumpkin mixture until combined. This would be the time to add the nuts of your choice.
Pour the mixture into the pans/pan
Bake for 1 hour or until a toothpick inserted into the middle comes out clean.
When done, let the bread cool for about 5 minutes before taking it out of the pan.
MMMMMmmmmmm Good!
