Our family loves bacon. We also love pancakes and waffles. For me, it’s cheaper on the pockets to make from breakfast from scratch. You can make a big batch of pancake mix and set it in a air tight container for a later day. I’ll be posting about my mixes soon.
To make Candied Bacon you will need:
8 pieces of bacon ( any kind but maple adds even more flavor)
1/2 brown sugar
Directions:
Preheat oven to 350.
Line a baking sheet with foil.
Arrange bacon on foil and sprinkle with brown sugars.
Cook for 20 minutes, turning bacon half way through cook time.
Let cool completely before chopping.
For the Pancakes:
Used your favorite batter for pancakes. I use my homemade mix posted here and I added 1 Ts of vanilla extract and 1 Ts of cinnamon to my batter.
Heat a large skillet over medium heat, and coat with cooking spray.
Coat the inside of you cookie cutters to keep the batter from sticking.
Place the cutters in the skillet then pour 1/8 to 1/4 cupfuls of batter inside of the cutters. You only need to fill the cutters half way.
Cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
When the pancake is done place it onto plate and slowly push the it out of the cutter.
Top with butter, bacon, and syrup.
Devour Immediately!
