Bananas Overload!

So, I got a big bag of bananas from the store which explains why I chose to post again about this tastful fruit. I went to town in my kitchen yesterday. Making everything I can think of with what I had on hand. I made a smoothie in the morning. After school, my youngest asked for a banana so I put together a simple snack. Then, after glazing over what I had in my cabinets, I decided to make some baked goods. Baking yummy treats and cakes is my favorite thing to do in the kitchen.

Chocolate Chip Banana Cake with Glazed Pecan Bits

2 cups flour
2 Teaspoons baking powder
1/2 Teaspoon salt
3/4 Cup butter
2/3 Cup sugar
2/3 Cup brown sugar
1 Teaspoon vanilla extract
3 Medium sized bananas, mashed
1 large egg
12 – 16 ounces chocolate chips (I used half of the bag)
1/2 Cup glazed pecan, (broken down into pieces)

Directions:

  1. Preheat the oven to 350 and prepare your cupcakes pan. I use liners, but if you don’t have or want to use them, then I suggest that you grease your pan.
  2. Combine the flour, baking powder, and salt in a medium bowl.
  3. In another bowl beat the butter, sugar, brown sugar, and vanilla until creamy.
  4. Add in the bananas and egg.
  5. Next, add in the flour mixture.
  6. Stir in chocolate chips, and then the pecans.
  7. Use a spoon to drop dough into the cupcake pan.
  8. Bake for 20-30 minutes, or until the toothpick that you insert comes out clean.

I love bananas, and so does my girls. My boys, on the other hand, only like bananas when they are baked in something. The are not fans of eating one straight out of a peel.

Did you know that Bananas can be used as a substitute for eggs? To replace eggs in baked goods like brownies, use one ripe mashed banana for every egg the recipe calls for. Are you a fan of bananas? Do you add them to your baked goods?
