Happy Sunday Everyone!
I was starving like Marvin this morning, and decided to put something together with what I had in my kitchen. I knew I didn’t feel like having just bacon and eggs. I didn’t want pancakes, or waffles, and it definitely wasn’t a ‘greek yogurt with chia seeds and fruit’ kind of day. My appetite always push me into eating something out of the ordinary. While my taste buds are not always fond of keeping it simple lol. Looking around in my fridge, I noticed I had some butternut Squash that needed to be cooked. So, I raided my pantry for a few items, and came up with a yummy, energy-fuelled breakfast.
Ingredients:
1 Cup fresh Butternut Squash, diced
1/2 Cup Green Apple, diced
3 Strips of Bacon
1/8 Cup of Pecans, crushed
1/8 Cup Green Onions
Diced Salt & Pepper for taste
Instructions:
Preheat the oven to broil.
Roasted the Butternut Squash for about 15-20 minutes in a lightly greased pan.
Mixed every few minutes to ensure that it is cooked all the way. While the squash is broiling, cook your bacon in a large skillet.
When bacon is done, remove from the pan. When Squash is done (soft) then it remove from the oven.
Add the apples, pecans, and squash to the hot bacon oil, and saute for about 10 minutes, over medium-high heat. Keep mixing to make sure nothing sticks or gets soggy.
When your food is done, add to your plate and garnish it with the green onions. Add salt and pepper to taste.
A few facts about Butternut Squash:
- Eating 1 cup of butter squash contains about 1/3rd of your daily diet.
- It’s good for your eye health
- Butter squash is high in fiber, and great for your heart.
- Butternut squash is an excellent choice for blood sugar regulation.
This was a simple and delicious breakfast that kept me full throughout the morning. I think next time, I’m going to add some spinach for a little bit of extra greenery.
