This whole week is going to be hot. I decided to make my Mother’s Stuffed Bell Peppers in my crock pot for dinner yesterday so that I didn’t have to turn the stove on.
My Mom made this dish often when I was a kid. I was not a fan of bell peppers like I am now. As a child, this was the only dish I would eat with the pepper in it. This was the first time my kids will have this dish. Don’t know why I waited so long to give it to them. I guess it was fear of making it, them not liking it, and then me ending it with a eat or go to bed hungry type of attitude.
You will need:
1 lb ground beef (you can substitute for other types of ground meat a well.)
6 Bell Peppers
2 cups of Italian shredded cheese
1 jar of pasta sauce
2 cups cooked rice
1 cup diced onions
3 Tb sugar (optional)
Salt and Pepper to taste
Directions:
1. Cut the tops off of the bell peppers. Remove stems and seeds and dice the tops of the bell peppers.
2. Pour 1/3 of a cup of water into the bottom of the crock pot and nestle bell peppers in.
3. In a small bowl mix pasta sauce and the sugar. Add enough to your liking. (OPTIONAL)
4. In a large mixing bowl, combine the uncooked ground beef, onion, diced bell peppers, 1 cup of shredded cheese, 3/4 cup of cooked rice, and pasta sauce.
5. Fill bell peppers with ground beef mixture and top with more cheese. Pour desired amount of sauce on top.
6. Cook on low for about 6 hours. You can test mixture with meat thermometer for doneness. It should be cooked to 160 degrees.
This dish ended up being a hit with the kids and the husband!! Two thumbs up for my Mom!
