Whenever my bananas start to go brown I go through a baking frenzy. I bake bars, muffins, and breads. Yesterday, I decided that I was going to make some bread. This bread not only taste good but, it also has some healthy elements to it too.
I went to the kitchen to gather my ingredients:
3 eggs
3/4 cup of coconut oil (melted)
2/3 cup of brown sugar
1 cup white sugar
1 cup grated zucchini (with all of the liquid drained out)
2 ripe bananas, mashed
3 1/2 cups Whole Wheat flour
2 Tb Wheat Germ
2 Tb Flax Seed ( I use ground flax seed with blueberries from Trader Joes)
1 Tb cinnamon
1 1/2 Ts baking powder
1 Ts baking soda
1 Ts salt
1/2 cup chopped walnuts
** The Wheat germ, Flax Seed, and Walnuts are optional
Directions:
Preheat oven to 325 degrees.
Grease and flour your two 8×4 loaf pans
In a large bowl beat eggs until yellow and frothy
Add oil, brown sugar, white sugar, zucchini, bananas, and the vanilla.
Blend together until well combined.
Stir in flour, baking soda, baking powder, salt, wheat germ, and flax seed. At this time you could choose to add your nuts. I add mines later.
Divide the batter evenly between the two prepared loaf pans. I topped one of the loafs with the walnuts.
Bake in the oven about 50-60 minutes. Or until a toothpick inserted in the center comes out clean.
Remove from the oven when done and place on a wire rack to cool before removing and serving.
Yum! Freshly baked from the oven!
I took my two loafs to church last evening to share for dessert at the end of VBS. Everyone who had some enjoyed it. It’s definitely a crowd pleaser.
What’s you favorite kind of bread to make to home?

Why don’t I ever combine the two!? I always make one or the other, trying this next time – thanks!!
Mmmm…this sounds really good! We’re growing zucchinis in our garden and I’m hoping to make some of this bread soon. Thanks for sharing. 🙂
