Loaded Potato, Broccoli, and Chicken Skillet

This last couple of weeks have been a bit crazy since the kids have been back in school. We have be focusing and readjusting to getting back on track with everyone’s schedules. The girls have after-school programs that they participate in. One has joined cross country and the other is in the school play. My oldest son is looking for a job and has signed up to take the PSATs this year. My younger son is getting use to his teachers and learning the ways of high school.

I have not been able to post as much as I would like. I’ve just been overly exhausted lately. Planning birthday parties, family road trips, bbqs with friends on the weekends, and family days at the local festivals and the zoo. Not much time for down time.

I vow to plan my days out better and make time for everything that I want to do.

Last week I had a busy night with having 3 out of 4 back to school night events in the same night. I figured, I needed to make something easy, quick and filling that I could make earlier than our regular dinner time. I didn’t feel like making a full on meal with sides. It’s easier to have one pot meals on the evenings that I have meetings to go to. I make this chicken dish at least once a month. Can’t go wrong with Chicken, Bacon, and Potatoes with this family.

You will need:

8 strips of bacon, cooked and crumbed
8 small red potatoes, cubed
2 Lbs of boneless Chicken (I like thighs), cubed
1 Tablespoon Cajun Seasoning
2 Tablespoons of Minced Garlic
1 small onion, diced
1/2 red pepper, diced
1/2 green pepper diced
1 Cups frozen broccoli, thawed
3 Tablspoons of olive oil
1-2 Cups of shredded cheese (depends on how much cheese you want)
1/4 Cup Green onions
Seasoned Salt And Pepper, to taste

Directions:

Cut potatoes into cubes and boil until soft.

In a large skillet, Cook chicken with the Cajun seasoning and 1 tablespoon of minced garlic. When done and no longer pink, set to the side.

In the same skillet, heat olive oil. When ready add the onions, peppers, and the other tablespoon of garlic. Saute until the vegetables are soft.

Next, add potatoes and the broccoli to the skillet. Cook for another 3-5 minutes.

Mix in the chicken.

Top the dish with cheese, bacon, and green onions. Cover the skillet with a lid and remove when the cheese has melted.

*You can omit the bacon if you don’t eat pork.

*I like to eat mines with Greek yogurt, in place of sour cream. Hubby likes it with hot sauce.
