Pumpkin, Banana, & Egg Pancakes

Did you know that all you need it a banana and an egg and you can make a pancake in minutes?

About 4 years ago, I was participating in bootcamp exercising a few days a week. During that time, I was in search of  healthy breakfast options to get me through my workouts. I came across 2 ingredient, pancake recipes all over Pinterest. If you got a banana, and 2 eggs, you got yourself a healthy little breakfast.

Fast forward to now. I was in the middle of steaming a sweet potato to eat for breakfast, when my stomach started to really take it to the next level, and growl ridiculously.

It was at that moment that I realized, I had waited to long to eat, and if I didn’t eat soon I was going to become hangry, and possibly bite someone’s head off.

I couldn’t wait any longer so I look around at what I had, and remembered that I could make the 2 ingredient pancakes. Then I thought, since I’m adding pumpkin puree to everything, why not add some to this pancake mix, and see what happens.

I said a prayer, I went for it, and I’m pleased to say, I’m happy with the end results!

You will need just 3 ingredients to make these pancakes:
  • 1 Banana
  • 2 Egg, beaten
  • 2 Tablespoons Pumpkin Puree

Mash you banana

Butter/oil your pan, and heat it to a medium heat.
Pour 1/4 cup of your batter into your heated pan.
You can tell when your pancake is ready to be flipped when you see the edges cooked, and are firm.

Flip over, and cook until the other side is done.
Add your favorite topping. I like a little powdered sugar and maple syrup. It’s great by itself as well.
