Today was a good day. I got 10 loads of laundry done. Normally I have everyone do their own but we all have been super busy so I decided to just get it all done today since I had the time. Laundry never stops in a household of 6!
Yesterday was a last day for my 6th grader to run for cross country. It’s her first year doing a sport, and being part of a team. She loved it. We had talked over the summer about joining the track team which didn’t start until the spring. She didn’t want to wait that long and decided to start running now with cross country. She still plans to join the track team later. Hubby and I are so proud of her!! She roughed it out and came out to be a good runner at the end. To see the smile on her face when she could see us cheering for her on sidelines, was enough to make my whole year!!
Went to see my baby girl at her Walk-A-Thon today! It’s a day that the students get to walk about the field to raise money for the school. Each lap represents a certain dollar amount that will be donated to the school. Also, the class with the most laps gets to have a ice cream party. Baby girl was super excited that she did 20 laps. That’s 5 up from last year! We have been at the same elementary school for the last 7 years, and every year for the Walk-A-Thon the kids get a special shirt that is designed by one of the students at the school. I keep them every year, so can just imagine how many shirts I have been hoarding over time ha ha ha.
Tonight is a simple requested dinner. I had leftover chili that I cooked in my crockpot yesterday. The kids asked for chili dogs and fries so that’s what I gave them. I got some hot dogs from Trader Joe’s, cut up potatoes, made some fries, and voila, dinner is served! Easy to cook with low mess to clean up afterwards.
I did want to share a recipe I had made earlier in the week though. Check out my Asparagus Fries. A crunchy and delicious veggie side dish!
You Will Need:
24 asparagus stalks
1/2 whole wheat flour ( you can use any kind)
3 eggs, beaten with salt and pepper
1 cup of Panko breadcrumbs or Itlaian breadcrumbs (I’ll be sharing my homemade recipe soon)
1/2 Parmesan cheese, grated
Salt, garlic powder, and pepper to taste
Directions:
Pre-heat oven to 475 degrees
Put the asparagus in the flour, then dip into the egg, and coat with the breadcrumb mixture
Place asparagus on a baking sheet and bake for 7-13 minutes, or until the asparagus is golden brown.
*If you want to add a little more flavor, try French Cheddar Cheese Fried Onions. crunch them down and add them in to the breadcrumb mixture.
Ready to be Devoured!

Chili with hot dogs and fries sounds great! The asparagus fries also look great! Thanks for linking up with the Bloggers Brags Pinterest Party. I have pinned your post to the Bloggers Brags Pinterest Board!
