Life With Kids And My New Crockpot

I have been busy and running around with the kids for the last few weeks, as usual. My oldest had his PSATs and job hunting. He is determine to find a job. He is also apart of the Break Dancing Club at his school. He has been having a lot of practices in the last couple of weeks because of his recent performances. My other son started tutoring our neighbor’s first grade son so I have been making sure I pick him up and drop him off at the Homework Center. My oldest daughter’s cross country is over so now I’m continuing to help her to stay on top and stay focus with her work. And last, but not least, my baby girl who has been working hard the last 6 weeks to do her best in her school play. On top of all of that I helped the casts and crew backstage during the rehearsals and the play, I have been helping out around church, planning Thanksgiving Dinner, and planning baby girl’s birthday that is coming up in a couple of weeks.

Would it be wrong to ask hubby for a vacation before our anniversary next summer 😉

While working on our family menu I decide to have crockpot meals for dinner for the whole week. Simple yet tasty meals that my family will enjoy. The weather has been cold, and meals from my crockpot is the way to go during this season.

Last week I went to Target and got a 2 qt. crockpot. I figured, I would just use it to make jellies, sauces, and butters for my family. I can use my big crockpot when I’m making food for gifts. I also got another crockpot because now I don’t have to decide between making jelly or making dinner. I can make two things at once!

On Sunday I got to make chili for dinner, and some yummy apple pumpkin butter at the same time! I was a bit overjoyed on the inside 🙂

To make Apple Pumpkin Butter in your Crockpot you will need:

5-6 medium Apples ( I used Pink Ladies from Trader Joe’s)

1 Can (15oz) of Organic Pumpkin Puree (or 1 cup of cooked pumpkin)

1/4- 1/2 Cup Maple Syrup (depending on your taste buds)

1/2 Tablespoon of Cinnamon

2 Teaspoons Pumpkin Spice Seasoning

1/4 Teaspoon Allspice

1 Teaspoon Vanilla Extract

1 Crockpot Liner

Directions:

Peel, core, and chop of the apples in to small pieces.

In a bowl mix the pumpkin puree and the seasonings

Add apples to the mixture

Pour mixture into crockpot

Cook on Low for 6-8 hours on Low depending on how your crockpot cooks.

Use a potato smasher if needed to smash the apples down some.

Stir occasionally. Over time you will see the mixture’s constancy change.

When done fill into jars and let cool all the way before putting the top on.

When you are ready to eat, spread it across you favorite toast or zucchini bread.
