Foodie Friday: Chicken Cordon Bleu Casserole

My family loves Chicken Cordon Bleu. I like to experiment with the recipe and try different ways to make it. I have stuffed chicken with ham and cheese and made a crust for on the outside. I have wrapped the ham around the chicken with the cheese stuffed in the middle. I have also made it in my crockpot. This time I wanted a casserole type of dish. I research Pinterest and came across this recipe from TastyKitchen.

Base:
1 large rotisserie chicken, meat removed and pulled (about 5-6 C)

1/2 pound sliced deli-style black forest ham, chopped
1/2 pound sliced swiss cheese

Sauce:
4 Tablespoons butter
4 Tablespoons flour
3 Cup milk
2 Tablespoons lemon juice
1 Tablespoon Dijon mustard
1/2 Teaspoon salt
1/2 Teaspoon paprika
1/2 Teaspoon pepper

Topping:
4 Tablespoons melted butter
1 1/4 Cup bread crumbs
1/4 Cup parmesan cheese

Preheat oven to 350 degrees, and spray a 9×13 casserole dish with nonstick spray.

In a medium saucepan, melt the butter over medium heat.

Whisk in the flour and cook for 1 minute.

Slowly add the milk, whisking to keep clumps from forming. Turn the heat to high and cook until the sauce thickens and boils completely, whisking often. Remove from the heat and add the remaining sauce ingredients.

Pour the finished sauce over the base layer.

In a small bowl, mix together the topping ingredients until the butter is evenly distributed over the crumbs.

Sprinkle over the top of the dish and bake for 45 minutes. I also turned on the broiler and and let the topping crust up a bit.

Allow to cool for 10 minutes before serving so the sauce with thicken just a bit.

My family LOVED this recipe. It’s definitely a keeper!

Making an old dish with a new twist! Are you a fan of Chicken Cordon bleu?
