Cucumber And Celery Fruit Salad

cc3

Hot day here in the Valley of Cali. I have lived in a couple of hot places, but never in a place where the temperature gets over 100 degrees! If we didn’t have a really good air conditioning unit, I don’t think I would be able to make it out here in this heat. I would have melted into the pavement. I thank the stars above that I have a nice pool to help cool our body temperatures down. This valley heat is no joke.

While trying to stay cool, I’m trying my hardest to cook so much. Salads, salads, salads are the way to go during the summer. I eat salads for breakfast, lunch, dinner, and even for a snack. All you have to do is change up the ingredients to match your mood, and you could make salads for days.

A couple of days ago, I set some ingredients out on my counter, and let me creativity and hunger take over. I put together this Cucumber and Celery salad for breakfast. I didn’t know how it would come out, considering, I’m not a fan of celery at all. I surprised myself when I took my first bite. My hungry thoughts, became my delicious reality 🙂

Check your kitchen for:

1 Stalk of Celery

2 Persian (mini) cucumbers

What a refreshing salad this is. It’s perfect for those hot summer days.
