Ranch Chicken Stuffed with Broccoli and Cheese

Threw a dish together with the stuff I had. Hope you like it as much as my family did.

You will need:

3 huge boneless chicken breasts or thighs (about 2-3 lbs)

half a head of broccoli

3/4 cups shredded cheese of your liking ( I prefer sharp cheddar)

1/4 cup of shredded Parmesan cheese

2 tbs minced garlic

2 tbs ranch seasoning (I use my homemade mix)

2 cups ranch dressing (Again I use my homemade mix)

big pieces of foil to wrap around the chicken

 Instructions:

Preheat the oven to 450°

Do a partial cut down the middle of the chicken and open it and lay it on foil

Season the chicken with salt, pepper and ranch seasoning
In a large skillet, heat oil on medium-high heat. Add garlic and saute for 1 minute. Add the broccoli, Parmesan, salt and pepper and saute about 3-4 minutes, stirring occasionally. Turn off the fire and let the broccoli mixture cool down a little bit. Add the cheese and stir

Spread the broccoli mixture evenly between all the pieces. Roll them up and keep them seam side down. Secure them with toothpicks.
Pour the ranch dressing evenly among all the chicken.
Wrap up the chicken with the foil and make sure it’s sealed. Place on a cookie sheet.
Bake for 45-55 minutes, or until chicken is fully cooked
This would be great with some Rice or Orzo.
