Pork, Peppers, and Zucchini

This is a colorful dish that is sure to please the tummies in your home. Served over Egg Noodles with sweet bread on the side. Yum!
Ingredients:

4 tablespoons  olive oil
6 Tb minced garlic
3 pounds boneless pork, cut into 1-inch pieces ( I used pork stew meat less time spent cutting)
8 sweet peppers, cut into 1-inch pieces
1 large onion, chopped
2 can (28 ounces) stew tomatoes
1 cup Zucchini sliced in halves
3 teaspoons  dried oregano
1 teaspoon  parsley flakes
1/2 teaspoon  black pepper
12 ounces  uncooked egg noodles

Directions

1. Heat olive oil in a large pot; add garlic and cook 1 minute. Add pork and cook 5 minutes, until lightly browned, being careful not to let garlic burn. Stir in peppers,z and onion and cook for an additional 5 minutes, stirring occasionally.

*This recipe makes 8 servings. I had enough left over to share with a neighbor.

* If you are not a fan of pork then you can substitute with Chicken as well.

This was so good that my oldest daughter, who hates tomatoes, asked for seconds.
