Another busy week!
It’s the story of my life!
Between play rehearsals and cross country practice with the girls, organizing my home, dentist appointments, eye doctor appointments, putting together a farewell party at church, teaching how to make taffy at craft night at my church, decorating and preparing for a up and coming baby shower, being elected Room Mom, and starting a new book for book club…. I’d say I was running myself ragged, but I’m not. I love what I do! I just wish I had my hours in my day 😉
A couple of weeks ago I made some yummy Ranch Breaded Chicken. Been so busy that I didn’t have time to share until now. It’s a family favorite, and it’s delicious!
If you are a ranch lover you will love the chicken recipe.
You will need:
1 cup panko bread
1/2 grated Parmesan cheese
3 tsp garlic powder
4 tablespoons homemade ranch mix
4 tablespoon of butter, melted
2 lbs boneless, skinless chicken thighs or breasts
Melt 2tbsp butter in a shallow bowl
In another bowl mix together the Panko, garlic powder, cheese, and ranch mix
Dip the chicken in the butter, then coat the chicken with the breading mixture
Bake for 30 minutes or until done. Make sure to flip the chicken once half way through cooking. I decided to cook the chicken in my Nuwave oven. It not only cooks fast, but allows excess oil to drip out making for a healthy meal.
Crispy, flavorful chicken done and ready to eat!
