It’s a gloomy day with a little bit of showers here and there. This weather made me bring out my crock pot to make something tasty and comforting. After going through my recipes I decided to make my Gumbo. This dish is one of my favorites.
You will need:
1 pound smoked sausage, such as andouille or kielbasa, sliced and cut in halves
4 pounds boneless, skinless chicken thighs
2 tablespoon of Creole seasoning
1 cups chopped onions
1 cup chopped celery
1 cup chopped bell peppers
1 teaspoon salt
1/4 teaspoon cayenne (optional)
3 bay leaves
4 cups chicken stock
2 tablespoons chopped parsley leaves
Rice

Mix all of the ingredients, except the shrimp, inside your pot.
Cook for 6-7 hours on low or 4-5 hours on high.
Add Shrimp during the last 30 minutes.
I love my crock pot!
I love that I can set it and forget.
I love that all the flavors simmer together for hours.
And I love that this dish is enough to feed my family and still have leftovers for them the next day.
What are some of your favorite meals to eat on gloomy days?
